Butternut Squash Sabzi


Butternut squash, Target Good and Gather 12oz frozen bag
Fried onions, 1/4 cup
Tomato sauce, 7 tbsp
Crushed red chili flakes, according to taste
Cumin seeds, 1 tbsp
Cumin powder, 2 tsp
Coriander powder, 2 tsp
Red chili powder, according to taste
Turmeric powder, 1 tsp
Ginger and garlic powders, 1/4 tsp each
Curry powder, 1 tsp
Kalonji seeds, 1/2 tbsp
Salt, according to taste
Chopped cilantro, as per liking


Add 1/4 cup oil, 1 tbsp cumin seeds, 2 tsp cumin powder, 2 tsp coriander powder, red chili powder, 1 tsp turmeric powder, 1/4 tsp each ginger and garlic powder, 1 tsp curry powder, and 1/2 tbsp kalonji seeds in a cooking pan and mix well. 

Fry the mixture on medium heat, adding a little water when sizzling begins to prevent burning, and then add the frozen butternut squash. 

Begin frying the squash while gathering and pouring the hot mixture on it to defrost. On the package, the stovetop cooking time is around 12 minutes. 

Add fried 1/4 cup onions when squash pieces have defrosted, continue cooking for 2 minutes. Add crushed red chili flakes according to taste. 

Add 7 tbsp tomato sauce and cook until oil separates. Check if squash is completely cooked (soft and mushy), otherwise add some water and cook while covered. Taste for salt, and adjust. 

Cook until oil separates. Garnish with chopped cilantro.
